1961 CF700 Engine Info

Looking to identify the engine which I have no reason to believe it is not original.
Truck has nearly 60k miles. Vin code C70NUL60723*.
2 speed rear, air brakes, sleeper, with dump bed. I don't know the history of the truck ... certainly not a fire truck with the sleeper. Road Way used these trucks for many years but from all indications the original paint is red. Of course it would not serve too well today as over the road .... most drivers could not get into the sleeper!
I'm not really a Ford guy but I like the style. Owned one other Ford long time ago back in high school ... 1953 pickup. Come to think of it, I guess I'm really not brand loyal. I drive a Dodge with a Cummins, wife drives a 1984 Vette (Chevette), called Grandma's Vette, and I have 4 MGB's in the garage. When we travel we rent a Nissan.
Anyway, back to the F700, there is a 1994 Cummins 5.9 waiting to be transplanted. The V8 (302/holly 4 carb?) runs great but I believe gas mileage today would be calculated as gallons per mile!
Still looking for the right transmission to replace original 5 speed. Leaning very strongly towards the Eaton 8 or 10 speed with overdrive. The 6.5 rear will need a little help with the lower rev diesel.

According to the last 6 digits of the VIN, it's not a 1961, it's a 1971.
And according to the 4th digit of the VIN, it has a Cummins diesel engine. So, either you copied the VIN wrong (*), or...
Compare the VIN stamped on the Warranty Plate to the VIN on the registration to see if they match.
People replaced damaged left doors with used doors, then failed to install the original Warranty Plates on the replaced doors. The C Series doors interchange 1957/86.
C70 = C700 Tilt Cab.
N = Cummins NTC-280 I-6 855 cid Diesel.
U = Louisville KY Assembly Plant.
L60723 = 1971.
*However, if the L is a 1 = VIN: C70NU160723.
1961 C700 302 4V assembled at Louisville KY in April 1961.
