Is there any white smoke from the exhaust? If you have a head gasket leak, or a cracked head or block, water entering the cylinder, can make steam from the heat, and the exhaust will or can blow white.. ?? As everyone has said, water in the cylinder, will circulate air, under pressure, from the cylinder, into the cooling system, and the radiator will bubble, which you can see with the cap off. Check for the white smoke...
Another thought; when I put the valve covers back on I had to put the spark plugs line back on. What if I ran the spark plug line wrong ? The motor sound normal. If the firing order is off can it cause back pressure? What is the correct firing order for a 68 360?
The orientation is correct but, I suppose it doesn't mean the thermostat is good. A thermostat housing gasket is cheap. You could remove the thermostat and put it in a pan of hot water and check the water temp with a thermometer to see if the T-stat is actually opening up when it should, just to verify whether or not if it's a problem.

2x ultraranger, I just changed my radiator last week and went ahead and put a new fail safe thermostat in and it stuck right off the bat. It does pays to check them.
It sound like you've been over filling the radiator. And keep draining the water out some. getting more air back in it. There should be a 2" fill line on the radiator below the cap opening. If not lower water 2" from cap.
To get the trapped air out of the your block loosen the heater hose so as your filling it with water/coolant will push all the air out the loose heater hose nipple on the manifold.
Good trick amigo, with the heater hose.. and checking stuff today, is always a good idea. Plenty of times, the 12 year old Chinese kid, supervising the 8 year old, looses track of quality, and at 15 cents an hour, who gives a ***** anyway...?
