Tire manufacturers are aware of guys trying to put larger tires on stock wheels, they all have a recommended wheel width i.e. 8-10 which was the width Toyo gave for 35s on my old F250 and also give spec #s on the wheel they used to get their measurements. Once you go significantly larger the door jamb doesn't apply, as that psi is what is called for in the stock tire to inflate with enough air to support truck, a significantly larger tire can hold significantly more air but that doesn't mean it needs to be aired to max psi......this is when inflating to psi that gives you best contact patch is needed and as mentioned a chalk line across tires works well....or find a dusty road and make a clean line across with finger or a damp rag and it's the same effect look for chalk to dissappear evenly or for clean line to dirty back up evenly
