Idling issues

I have a '79 F150 Flareside, 302 V8 three speed stick with overdrive. It has all the environmental crap on it but I disconnected the air pump after it stated backfiring when I let up on the gas. Shortly after that the idle started fluctuating after the truck warmed up so it would go up to 750 rpm and then drop to 250 and then go back up again. Occaisionally the idle drops so low that it stalls unless I rev the engine a bit while I am sitting at a light. I cranked the idle up to 850 to keep it from stalling but I am now also having trouble starting the engine when it is warm. The carburetor seems to be loading up so you have to keep the accelerator floored and crank it over a lot until it starts. I am not at all familiar with all the elctronic and emissions crap on these cars and find that you can't even adjust the carubretor. Any ideas about what is causing this problem and how to fix it? Or, as an alternative, can I disconnect all the emissions crap and put a conventional carburetor on in place of the one on the car now. I might add that I just replaced all the vacuum lines after this happened with no change. I have owned this truck since it was new and it only has 22,600 miles on it.
