I replaced an alternator a couple weeks ago and before the battery died, the windshield wipers went to one speed (I assume to save battery for running the vehicle). Truck has been running great with the new alternator, but the wipers still only work on low speed throughout the speed settings.
Did I lose a voltage regulator somewhere or should I disconnect the battery for a while to reset something?

Try the battery disconnect first, since that's the easiest.
Had to replace the turn signal/wiper stalk on my 2011 f350 about a month ago because the wipers would go on by themselves, and the wash button would not always work. The stalk replacement seems to be a common issue; they are mini computers. Thst may be your issue too. Is easy to replace.
