Your pushrods would only be too long if you planed the heads or decked the block quite a bit. I wonder if your valve train is not too tight, my 1.7 ratio pedestal roller rockers only take 17-20ft/lbs of torque and they must achieve this from 1/4 to 1 full turn after the slack has been taken out of the pushrod. Anything under 1/4 turn needs custom length pushrods.
I have seen 5.0's that had a true double roller timing chain installed on them, the chain touched the timing cover ever so little but it would make a funny knocking noise. Don't put a high volume oil pump on it, you don't need one on a ford smallblock.
