You might be able to do it that way but it would probably be easier to do it the right way. Kind of like building a ship in a bottle, a wonderful art and hobby but not the thing to do if all you really want is a ship without the extra challenges.
Maybe the head will come out but the intake will be glued to the head and the weight will press down on it so sliding the head out may be a problem. The bigger PITA will be how to reseal the intake to the head when you replace it? How do you scrape out the old sealer and clean the underside of the intake? It all can be done the hard way but why?
I think most mechanics would call doing it this way, a halfa$$ job. Do it right, you will be done faster and less likely have sealing problems.
I am not a pro, just a hobby mechanic, but I wouldn't do it the way you are thinking, unless on your engine, the intake runners do not overhang the head thus causing interference while removing and replacing the head. None of the engines(only 1 Ford SB) would have allowed you to do it the way you want to, at least not easily.
basically, no it cant be done. and it would be near impossible to get the new gaskets back in correctly when its time to put it back together. do it righ the first time.
