I have a '78 Econoline 250, 138'' wb, with a six cyl. and 3-speed on the column AND an '87 Econoline 350, Pathfinder 4 x 4, 138'' wb, with a 460 and automatic with 26,000 miles.
I intend to put the '78 body on the '87 chassis complete with the entire '87 engine and drive line.
The '87 is a standard cargo van equiped as an ambulance.
Aside from all the work involved, are there any major problems involved and/or ''how to'' suggestions?

Not really. If you are good with a torch or have a good torch-man, you shouldn't run into many mechanical problems. I would try to keep the electricals intact though. Marking each wire as you pull (cut) it from the terminal. You'll need the 87' master cylinder for compatability for the brakes. You may need to convert the 78' steering column over to the 87', but you are probably going to do that anyways. The rig is going to be HUGE! Make sure you send us some pics of the build-up process!!
