Funny EOT today

So I have my 20' car hauler box trailer hooked up and I'm rolling out to pick up my new motorcycle today, just bopping along at around 55 - 60 mph... Coolant is around 190 like always, EOT is around 197 like always. Get on the four lane, up to around 65 - 70 mph, look over and coolant is 190 like always, EOT is 183... WTF? It's bopping up and down, 181, 187, 185... I spend about three or four minutes trying to come up with some legit reason for why that would happen, then I decide it's a flaky sensor or sensor connector. Then I spend the rest of trip wondering what the PCM is going to do if it goes to zero, or decides to read full hot. Get to where I am going, pick up my bike (2005 Honda ST1300 for those who care) and on the way home it's reading 130, 145, 180 then it kind of clicks (no sound, just a funny jump in the reading) and it's steady on 197 like it always is. Very odd, but I will reset the connector and maybe add a little waterproof grease. The engine never missed a beat.
