I'd keep my AC even if I lived in Alaska. I was there for 2 weeks in July 2013 in my IDI van, and it was in the 80's and 90's every day. Even up at Prudhoe Bay, we got in the 70's.

I'm not sure about eliminating the whole system on a diesel since I'm new to the format, but if it's belt driven like a gasser usually they have two belt options one with ac one without. So the compressor can be bypassed that way if that is the case go that route take it to your local mechanic and have them evacuate the system then you should be able to remove the, compressor, hi and low lines, and condenser pretty easily.
As I said that's the basic idea but it's based on my experience with gas engines where the components are typically belt driven and the AC lines and parts are all bolted on so proceed with caution.
