Is there anything I could have screwed up while doing balljoints that would have caused the power brakes to not work or did my booster just die on me while I was working on the Ex?
The pedal is stiff and won't really go down at all but I'm still getting enough brakes to drive normally... but my right leg is getting a work out.
Operate the engine at idle without touching the brake pedal for at least one minute.
Turn off the engine and wait one minute.
Test for the presence of assist vacuum by depressing the brake pedal and releasing it several times. If vacuum is present in the system, light application will produce less and less pedal travel. If there is no vacuum, air is leaking into the system.
System Operation Test
With the engine OFF, pump the brake pedal until the supply vacuum is entirely gone.
Put light, steady pressure on the brake pedal.
Start the engine and let it idle. If the system is operating correctly, the brake pedal should fall toward the floor if the constant pressure is maintained.
Power brake systems may be tested for hydraulic leaks just as ordinary systems are tested.

I'm thinking you could have screwed up one of the vacuum lines to the hubs. Never heard of that causing a vacuum leak serious enough to kill the brake booster, but with vacuum operated hubs it's worth a shot.
Do you have a vacuum pump? Sounds like it's time to check for vacuum going to the booster.
I have it written in my signature... there is no pedal "drop". It feels like when you're rolling it in neutral with the engine off and you brake. The first brake, the one that is stiff and not as much grab as if the engine was running but still stops the movement...
I only have about maybe 10% of my usual pedal travel but the brakes still work well...
