I've had a lot of work done to my A/C on an 87 F-350 with a 460 with not such good results. The only thing that hasn't been replaced is the condensor in front of the radiator. Well now the new (remanufactured) compressor seems to have expired just past it's one year warranty and I'm going to take it to an A/C only shop to try and get it fixed right but - my question is how do you know if the condensor need replacing? Is this a common thing that gets replaced? They did "convert" the refrigerant when they put in the new compressor last year and they claimed that's why they changed all the other stuff - but they didn't change that.
Any suggestions?

The condenser needs replacing if it leaks, or gets full of junk from your blown compressor, and can't be cleaned by flushing. If they didn't flush out the old mineral oil completely at the conversion, that may be the reason your compressor blew (if it blew).
R-12 condensers are very marginal when going to R-134. The pros suggest using a parallel flow style, as big as you can install in the space you have. That also means new custom hoses, as the standard hoses won't fit. That can get expensive.
You are now going to have to flush the complete system, replace the drier/accumulator, and orifice, as a starting point.
