The fuel gauge is driven from the dash micro processer.
The micro processor gets it's analogue signal from the tank level sensor and converts to digital then back to analogue again. There is a reason for the double conversion.
The level indicator (your gauge) is updated at what appears to be random intervals when the level moves far enough so this is likely what you notice.
Said another way the gauge is not driven directly from the tank sender.
