7HT problems
Well, here's my story. I've had my 7HT rebuilt twice by 2 different very decent mechanic's, most recently this last week and I still have the same problem.
After the second rebuild the fuel pressure was checked, gauge held at a solid 5 lbs. at any given motor rpm's.
After driving my '50 Ford F1 at any given time or distance, I'll stop, shut the motor off and gas will over the bowl and run out via the accelerator pump hole I think it is. This happens 6 out of 10 time I drive around.
The second mechanic suggested a fuel pressure regulator, cutting the pressure from 5 down to 3 lbs. after the float was adjusted a second time and the overflow persisted. Of course the last 4 times I've been at the fix it shop ~~NO~~ fuel overflow took place. I know, right?!
Even though it was checked, is it possible there might be a hole in the float?? ~Your welcomed thoughts please.~

Is the fuel hot coming out of the bowl? Does it do this on a cold engine after only a few minutes running?
If the fuel is hot or if it doesn't do this with a cold engine it would suggest to me that you have an ignition timing or cam timing issue assuming that your cooling system is functioning properly. If I'm reading what you wrote correctly something is causing the pressure to continue to build after you shut off the engine. Hot fuel is about the only thing that can do this. There are lots of stories on here of rebuilders setting the cam timing incorrectly. Ross Collard (ALBUQ-F1) is the expert on this.
Other options might be dirt in the fuel bowl (mine was filthy - see pix) which, if it is dirty, will mean that you will need to check the bottom of the glass bowl at the fuel pump and the fuel tank. Obviously you will need to clean them out if they are dirty. Regardless of what you find I would install a simple fuel filter in the line between the pump and the carb.
I have also read here that some of the guys only like steel tipped float needle valves and not the viton tipped type.
As for a hole in the float that should be easy enough to check when you take the top off the bowl to check for dirt.
But both of the latter problems should result in black smoke at the tailpipe and/or blackened spark plug tips.

I have been having the same problem with mine. I rebuilt it and it got a major improvement to it running. But I noticed today that fuel was going everywhere within minutes off shutting it off. Well to make a long story short after running with fuel cap off the fuel everywhere problem went away. I tried this several times today to prove that was the problem with consistent results. Maybe your fuel cap isn't vented or vent not working. I hope this helps. Good luck and let us know what fixes it.
