Does your truck have the automatic temp controls or is it the *****?
Please re-read post # 8. The circuitry for the refrigerant control is the same regardless.

a lot of vehicles have the thermo sensor in a location that allows the evaporator to over cool,
I happened to go back and look closer to the 05 Excursion's A/C control circuitry. It does not have an additional "De-Icing" switch mounted in the evaporator housing that is supposed to open up in the event the evaporator gets too cold shutting off the compressor.

The vac check valve is in the reservoir which is a black rectangular box/Tupperware thing near the battery on the 6.8... If your driving and get on it or go up a hill and the ad stops coming out of the front vents and changes to the defroster it's because your losing vac. When stepping on the gas you lose vac. That's the point of the reservoir and check valve.

The OP's information has made it pretty clear that this is not a vacuum problem.

Yes I know, but in a post someone said there's isn't a check valve and that assumption is wrong. But thanks for pointing out 3rd grade reading.. And as a shop owner, it's imperative to know where components are to properly diagnose, but what the heck do I know- I'm not an expert and rely on this forum for help time to time but knowledge is power.
