Ya really need a YOUNG one as well as fresh and make sure it got cleaned not long after shooting. You'll still prob need to par-boil it to tenderize it first too. My F-I-L used to make stew with them in upstate NY. They're OK but I wouldn't go out of my way for a dinner of 'em.
