You're in luck! There are tons of reference materials available for your '66. Keep in mind that the '65 is almost identical so you can also use reference material designed for those. Here's what I bought to help me with my '66 restomod. 1966 Ford Truck Factory Workshop Manual - available in paper or on CD-ROM. 1964-'72 Ford Truck Master Parts and Accessories Manual also available in paper or CD-ROM. The CD costs less than $25 from several vendors. The paper version is well over $100 and at over 6000 pages (I'm told) is a bit of a handful. I bought the CD. This gives you illustrated parts breakdowns and part number references that were accurate up to 1975, and are still useful today. 1966 Ford Truck Owner's Manual - lots of useful information that doesn't require paging through more cumbersome manuals and nice to have in your glovebox just like your truck came with. 1965 Ford Truck Body/Interior Assembly Manual by Jim Osborn Reprodictions. 1966 Ford Truck Wiring Diagram Manual, also by Jim Osborn Reproductions. Several forum members have posted the wiring diagram on the forum for free. 1965-66 Ford F100-F250 Illustrated Facts and Feature Manual, also by Jim Osborn. All of these are available from truck parts suppliers such as National Parts Depot and several others. Good luck and have fun!
You also asked where the VIN can be found. Of course it's the top entry on the data plate riveted to your driver's door. It can also be found in two places on the TOP side of the PASSENGER SIDE frame rail. One is about 30 inches in from the front end. The other is further back on the same rail under the cab. You would have to take the cab off to see it. Dirt and corrosion may also make it difficult to find the stampings.
