As far as the swap, this is what you will need:
The motor needs to be the same year or newer if you are planning on keeping the fuel injection (some states it is the law). You will need the motor AND computer. Make sure you get a complete motor, exhaust manifolds, accessories, and wiring harness. Anything that you don't get with the motor you will need to buy (the 4.9L accessories/brackets will not work on the v8 - except the power steering pump and A/C compressor). The computer must match your engine/tranny combo. So for example; if you get a '93 351w for your truck, you would be looking for a computer for a '93 351w with a 5-speed. The model of tranny doesn't matter, it's the type (auto or manual). I got my computer out of a '95 F350. Works fine.
You will need the frame mounts, radiator, radiator hoses, power steering lines, A/C lines, and at least the exhaust y-pipe. The tranny will bolt right up to the 351. The exhaust from the second cat back can stay the same. I replaced mine later for a performance increase.
Removing the 6 is fairly easy, if you have ever taken a motor out you will have no problems. After the motor is out the only thing you will have to do to put the v8 is put the new frame mounts in. This will require you to drill out two PITA rivets. That are a pain, after they are out you can put the new frame mounts on and put the v8 in. Put in the v8 radiator and replace all the lines and hoses. Change the computer (it is located in the driver's side firewall - beside the power brake booster). It is a pain too, I unbolted my inner fender to get the computer box out and the new one in. Check everything twice. This is an abbreviated version. If you are really planning to do this swap, then email me and I can give you more detailed info.
Plan on spending 3-4 days on this AND between $1500-$2000. When I swapped mine, I replaced a lot of things just as preventative maintenance. I replaced the oil pan gasket, rear main seal, pilot bearing, clutch, pressure plate, and slave cylinder. If any of these items goes after your swap, they are expensive and time consuming to repair. But they are easy and cheap while you have the motor out of the truck. Look closely at the oil pan, if there is ANY rust or bubbles on it either place it or sand blast it and coat it with some rust preventative stuff.

That's why there's a second gear....I only use first if I have to....2nd is low enough to get a truck moving just fine...
