Is there a wire that can easily be tapped that either making or breaking a circuit to it and ground or another wire will set off the alarm? Would putting this circuit back to its original state turn off the alarm or does it need key-on to re-set/turn off?

Looking at the manual, it looks like the system checks for either the door or hood sensor to register an open condition.
The door wiring is complex enough to be hard to find that particular circuit, but you can likely find the hood switch. I'd just use a test light to determine whether the circuit is open or closed when the hood is closed, and use that.
I checked the hood switch yesterday. This doesn't set off the alarm with the truck locked. Unless it has something to do with both the plunger switch (drivers side behind the radiator) AND the inertia switch for the hood light. I held the plunger down, locked the truck, and let the plunger back out and nothing happened. It is a simple switch though - on when down, off when up.

I'm not sure if you read this section in the manual or not, but there is a 20-second delay to arm the system. If you sit in the truck and lock the doors with the fob and then immediately open the door nothing will happen. Now if you wait 30 seconds and open the door the alarm will go off. I imagine the same goes for the hood.
