I use a scangauge II from auto zone
I beleive you mean your temp spread ECT vs EOT this is the most common one watched
Engine Oil Temp vs Engine Coolant Temp no more than 15* spread per Ford
and the SGII will monitor your High press Oil too and a bunch of stuff

You can probably get the SGII from cleanmpg.com for about $150 or less shipped. There isn't a way to monitor lubricating oil (dash gauge) pressure without installing a manual gauge since the dash gauge is basically an idiot light with a needle and only takes 7.5 psi to read "normal" when actual engine oil pressure is about 70 psi.
The SGII plugs into the OBDII port. There are 24 programmable "X" gauges that you have to enter to monitor critical functions that don't come preprogrammed on the SGII but they're simple to do. The list is posted several places. Search my recent posts and you'll find it.
