You'd be better off getting an Expedition and putting the 7.3 in to it. I think if you did shorten an Excursion to Expedition-length.... you might want to find somewhere to hide. What's next, taking a '65 Cobra and making it in to a sedan?
i thought about putting the 7.3 into the expedition, but I really didn't think it would fit. It seems like it would actually take more work than shortening an Excursion. The rear of the truck (suspension, axel, electronics, etc.) are a lot less and easier to do than all the issues of putting a much different engine into a vehicle not rated for the weight.
2 door excursion? Like an excursion sport with a 7.3! I'd like to see pics! Sounds interesting. Shouldn't be very hard, move the second door pillars forward to rear of the front doors and do the frame work pretty much in the same area. Fuel lines, brakes lines, driveshaft and not much else.
