I am gathering the trim off of my '57 and want possibly have them refinished. However, I would like to stay period correct any comments/ suggestions, etc. appreciated.
Parts that are chrome can be rechromed, and parts that are stainless steel can be polished so they will all have a like new appearance. That would have been original.
'57 F100 hood emblem, hood trim, benzels in cab, window trim? I don't know how to tell the difference and I do not want send off stainless to be chrome. Also if it is stainless would it be pitted? If so, is there anything I can do to repair it?

For the most part stainless parts are thin and lightweight...the potmetal parts are thicker and heavier and will most probably be pitted. Stainless does not pit and is not chrome plated, potmetal parts are chrome plated. Depending on your goals for the truck you may consider replacing the potmetal parts with aftermarket repops, they are usually cheaper to buy new than they are to have replated.
I'm not the definitive expert on 57's, but from this example in the ad, the trim around the windshield and wiper arms would be stainless. The hood emblems, 'custom cab' emblem on the door, door handles, etc., would be chrome plated pot metal. The bumper would be chrome plated steel, and the grille could be either chromed steel or stainless. A good chrome shop will be able to tell the difference and be able to advise you on what best to do with your parts. They would not chrome plate stainless. If you have parts that are pitted, as Charlie said, those would most likely be pot metal. They are labor intensive and expensive to repair. Finding good or aftermarket replacements would be more cost effective.
If I were you I would just buy new.I had a chromer wanting almost as much to chrome what parts I had as it would cost to buy new. Two Allen Grove brackets and two skull motor mounts were $450.oo. I could have bought brackets already chromed cheaper I think. Never Again!
