I have a 2004 F-350 with a 6.0 Diesel. I just got it out of the shop last week. Had EGR delete kit put in it and new Oil cooler. I also put a new thermostat in it a couple months ago. Since I have got the truck fixed, the heater was blowing mild warm air now its cold all the time. The temperature gauge stays in the middle all the time. Truck never runs hot. I did take the cover off the heater core thats not leaking but wasn't warm/hot either.
If your truck is a crewcab then it has a heater valve in the hose that runs from about the alternator to the firewall on the passenger side. There is a small gray vacuum line to that valve that opens and closes that valve. It's fairly common for the line to come loose or not be reconnected during those types of repairs.
FWIW--the indash gauges on a Ford truck are fairly worthless--basically idiot lights with needles. Temp gauges indicate cold/normal/hot and the oil pressure gauge only takes 7.5 psi to indicate normal when the actual engine oil pressure is regulated to about 70 psi.
