Does the light colored grey/adobe cloth interior worry you in terms of getting dirty and looking bad... or if you have it, how does it hold up over time?
I noticed in the 2011 F150 brochure they originally planned on having a black cloth interior available (XLT) which would have been perfect for my family. We've even considered ordering a Lariat just so we can get the black leather. I'd hate to buy our first new vehicle and have it looking terrible in a short period.
Are we over-thinking this or are we right to be concerned.
A couple years ago, I was was looking at used Explorers and almost every one with the very light beige interior, even though most had been shampooed by the dealers, looked grungy. The ones previously owned by smokers looked particularly bad. I had also looked a Jeep Liberties and although you'd think they would use a cleanable fabric, most of them looked like they were driven by incontinent hoboes after a few years. They somehow got water spots that could never be cleaned... Likewise, I've got friends with the really light interiors in Ford Fusions who complain about stains.
At least the F150 with the light "adobe" interior uses a darker carpeting. A woman co-worker with a Fusion and the light beige interior had light beige carpeting which looked like hell after only a few months of use.
Really light colored cloth interiors are for people who can keep white carpeting clean in their houses. (I am not one of those people.) They are especially silly in trucks. Seems like their only purpose is to look "bright and spacious" in the showroom.
I've got the Custom Package and a couple of bottles of the stuff really helps keep the black interior clean and lint free. Any and every thing comes out with a whisk of your hand. It also seems to highlight the contrasting stitching.
I'm not much for the Grey, but the Adobe and the Black look very good IMHO. The Custom Package includes silver metallic door and center panel trim similar in color and effect to the Harley Package. I think it looks sporty, expensive and I really like it.
The 3.7 is a very good engine. As gas approaches $3.50 and my average mileage approaches 23 (on the highway, 20 in mixed driving) I'm very happy with the 3.7 XLT Custom. The Custom Package is down right cheap for the interior, wheels, running boards and exhaust tip. As sporty as the truck is, I do kinda wish I'd considered Red and Blue a little more. The Black is really good looking, but would be a lot of work to keep clean & waxed.

my '06 had the tan interior and, while I did like it, I must admit that it tended to get/look/be kinda dirty/grungy pretty quickly if I didn't clean it regularly so I didn't complain too much when the only 2011's we could find that had the options/colors I wanted were all trucks with the gray interior. The gray looks good and it can't be any worse than the tan was for staying clean so I'm happy. I will admit that the black looks nice and if it had been available for my truck I would have given it some serious consideration.
Those seats in the pictures above look much like the material used in the seats of my Mazda 3. I've had the car for over 4 years now and apart from a little wear on the driver's seat, they still look very good for the age. I've taken the car on a few camping trips and photography outings (where I tend to get pretty dirty) and the seats look none the worse for it.

I work in the construction industry and everytime I get a new truck I put canvas seat covers in it. Mine are made by saddlebags and you can get them from autoanything.com. They are tough to put on but are machine washable and spill resistant. My last set went 175k before I replaced them and the seats still looked new underneath.

My 2010 has the stone grey cloth seats. Went to Target and bought some grey bath towels, had the wife sew some elastic to them and instant seat covers. Get them dirty? Toss the towels into the washer and your good to go.
Also cuts down on sun fading the colors.
