If the brakes have properly functioning self adjusters on them they will adjust with a hard stop in reverse. Frequently the adjuster mechanism is worn out and people do not replace the parts when they do a brake job. A lot of times people do not know how to inspect the parts for wear.
LOL! Doing it the hard way is usually the way to go. Once in a while you will find an old truck where the self adjusters still self adjust, or that even works at all, but I am still waiting to meet it!! :P But seriously, I wouldnt doubt that they dont work because the rear brakes are often neglected/shot. Some people just take the self adjusting mechanisim out and do it by hand, they claim brake failure is inevitable if something goes wrong....
I'd change the shoes and or at least put in new hardware, and grease up the spur thingy threads with some anitseize. Work only on one side at time (for those of you who didn't know....) I hated the first time I did drums and didn't save a side for reference, what a PITB to figure how it went by looking at a bad picture.... UGH!!
