The only reason to consider this would be to replace the manifold gaskets, bolts, nuts, out in the open (that would be easier). I can't see any other problems. The exhaust gaskets are/were laminated construction, and the bolts are notorious for corroding away and causing leaks. If you pull the heads w/manifolds still on, do not put them back without gaskets and bolts. Much easier then, instead of later. Leaks there can also trip an O2 code.
You might have some problems with engine mount bolts though, with the manifolds on already. Either way, if you remove the plastic inner fenders first everything will go a bit easier.
