Ive got a 1988 F250 EFI 351. It idles fine but when I step on the gas from a stop it dies for a sec and then catches up again, sometimes it will stall out completely esp if it has been idling along at low speeds before I stopped. I am stumped: Ive done the plugs, wires, cap, rotor, feul filter, PCV valve, I cant find any vacuum leaks (anymore)......

Dollars to Donuts your problem is one or both of your in tank fuel pumps. I had to replace both on my '89 F250HD 351W, same symptoms as you're describing.
You can buy them new from Ford (only ), or try your local wreckers if you don't like the sticker shock.
They're simple to change out, just disconnect the filler hose, undo the clamps, lower the tanks (run them empty first!), unbolt the old pump, bolt the new one in, and reverse the process. Shouldn't take more than an afternoon and it can be done in the driveway with a minimum of tools. Get a buddy to help manouever the tanks around though.
Hey, Its been awhile but it anyone cares, the problem was a dirty throttle body. Took it in to a shop and for 106.03 they told me there were carbon deposits and they cleaned it out. Now why didnt I think of that....
Any hints on what causes that and how I can stop it from happeneing anymore?
carbon buildup on the throttle body is just a thing that happens.
I work at a service shop and we sell a fuel injection cleaning service as preventative maintenance. I have also seen it do wonders to cars that were very badly mistreated.
We charge about 60.00 and I do one on my cars about every 30,000 miles. You can buy DIY stuff from auto part stores also. Seafoam from NAPA comes to mind. However shops like mine have equipment to make it an aresol and spray into the engine that seems to work better than DIY. I saw an '85 Audi blow grey smoke rings 7 feet out the exhaust pipe and it ran like a new car afterwards pretty cool.
