any ideas? is there an exisiting port i could use? maybe remove the stock oil pressure sender and install a T fitting where i could run both the oil temp and oil pressure senders? would that be a good spot to monitor the oil temp?
The sender has to be imersed in fresh liquid for it to accurately work so you have to be careful using Tee's and other adapters. Tee'ing off the stock pressure sender will not imerse the sender in fresh oil so the temperature would always read lower than than it actually is.
I would try to put a full flow Tee in the input to the engine oil cooler.
Another good place is a bung welded into the side of the oil pan below the low oil level.
do you have one your truck that you T'ed? what kind of readings do you see. i was thinking of using the T, but oleman makes a point above that T's will not give accurate readings?
It must be immersed. That means take the pan off and have a thin bung installed low in the pan. The probe, if the sender has one, must contact the oil to read correctly. Using a 'T' is only kidding yourself if you're after accurate temperature.

what about putting the sending unit where the oil drain plug is? just remove the wire and spin out the sender when changing the oil.

Besides needing a (possible leak-prone) adapter, it's hanging down there in the breeze, just begging to get sheared off by something laying in the road.

I wouldn't do it.
well the truck sits up high, so the pan is no where near the road, but for good measure, i figured i'd make a small skid plate mounted to the cross member located directly in front of the oil drain plug.
no question the side of the pan is the best spot, but i'm not about to drop the Y pipe and loosen the motor mounts to remove a solid, non-leaking pan.
