The EGR valve controls how much exhaust enters the intake for heating of the fuel. Its a small valve that hooks into you Exhaust port and is then directed to your intake, depending on how much the valve is open is how much exhaust will come into the intake. The heating of the fuel is for atomization, the fuel itself when cold will basically drip out of an injector and fuel that is warm will mist, it is basically to have all the fuel burnt so no emissions follow.
The EGR system was designed primarily for emissions. Under peak combustion temps. oxides of nitrogen form which is a pollutant. The system essentially uses exhaust gasses as an "inert" material which is controlled to enter the intake at selected times. The "inert" gasses simply take up space where oxygen would normally be. This cools the combustion temps below a point where oxides of nitrogen form. Another benefit of the EGR and cooler combustion temps is a reduction of pinging. Some, but not all, EGR passageways run thru the intake manifold where as Squig mentions will warm the manifold and improve cold weather performance. Drag racers like to plug these passageways as they also tend to reduce performance by warming the intake air thus reducing the density of the air charge. It's kind of a trade-off sometimes.

I also have a 96 Bronco with 5.0. How difficult is replacing one? I ran the codes on my check engine light and it comes up an EGR valve. Autozone wants $80.00 for the part, can it be replaced without much trouble?
Simply its just a valve that is screwed into your exhaust manifold and up to your intake, just take special care that you dont rip out the fittings it screws into, it will cost you more to fix then. other than that there should be somehting electical in there to unplug and plug into the new one. Pretty easy stuff.
