Choke Adjustment

Well now I'm driving my truck daily, since I finally got my license ! Every weekday I go to start my truck in the morning and it starts fine, but I have to keep my foot on the gas pedal, in order for my truck to warm up. It won't idle until it's completely warmed up. It takes at least 5-10 minutes everyday, or at least it seems.

I'm pretty sure it's a choke adjustment issue. We rebuilt the carburetor not too long ago, after we put it back on the truck, we set the choke adjustment right in the middle, because we don't know how to adjust it. It's a regular automatic choke without the electric assist on the stock Motorcraft 2-barrel carb. In the mornings, the temperature is maybe about 45 degrees or so. Any ideas? Thanks for any advice!
