Hi there, and welcome to the forum! Grafting cabs together to make an extended or crew cab truck has been done many times, with varying results. It usually takes at least two cabs and several doors to pull it off successfully, and make it look like it belongs that way. It's also a project best not done by beginners, due to the amount of custom fabrication necessary, and the potential for turning valuable sheet metal into useless scrap. It is a lot of work requiring an above average level of talent.
Here's an old thread with some interesting modified vehicles, similar to what you're suggesting.

I have been thinking about this for a long time. I have owned the 51 for over 25 years. Was one of the first vehicles I learned to drive. My brother rolled it just before my dad gave it to me. I fixed it up and welded new motor mounts on the water pumps and other assorted problems after. I picked up the 52 about 20 yrs ago and found it was in great shape and figured I would use the 51 for parts.
I love the look of the extended cab units and figure it would make a great family truck when done. The only problem I was having was what I should power it with. I wanted to go diesel and have always love the sound of the old Detroits but am conflicted about a GM engine as I am blue to the core!!!!
