the motor is from a 93 so do i really have to change the motor harness or can i use the 93 motor harness and just plug it into my main harness and just leave the map sensor unplugged so i can use my maf hoses. or do i have to use the 95 engine harness... any help in making this easier would be helpful thanks.

You're not going to get the map sensor it is mounted on the firewall so quit worrying about that, it is a non issue in your case.

Yea there is going to be some differences.
For example do you intend to continue to run the egr valve/system? 95 MAF, is that a DPFE type? If so then yea you'll need that part of the 95 harness for that sensor wiring.
To simplify things it sounds like you'll be better off changing to the 95 harness before you drop it in.
Somethings will be different but nothing not easily worked out between the two.
As far as vacuum, hook back up what it needs, everything that was connected before. Then just plug/cap any unneeded ports if you end up with any.
Take notes, take digital snap shots of everything before you disconnect so if your not sure and or can't remember where everything goes.
Tag everything with masking tape, write what it connected to right on the tape.

You're getting bad advice here don't change any of the wiring on your truck, simply disconnect everything at the engine sensors when you remove the existing motor and plug them back into the donor motor once it is installed.
However.. if you use a pre '94 5.0 you will have to change the cam because the firing order changed in '94. This matters because your truck uses sequential injection, and this is also the reason you cannot use an engine harness or partial harness from an SD motor on your truck.
