Will CHECK ENGINE light go out on it's own?
I replaced a specific O2 sensor based on an error code that pointed directly to it. Will the CHECK ENGINE light eventually go out on it's own or do I need to disconnect the battery? Will a certain amount of key cycles or drive cycles without the error eventually cause the light to go out? If so, what do those cycles consist of?

Yes, eventually, provided that the fault no longer exists. The actual number of drive cycles varies depending on what the actual fault was, a detail you omitted.
Be advised that fault codes do NOT always point directly at a specific part, they are data points to be used as part of a diagnostic procedure. Replacing a part based solely on a fault code may or may not result in a successful repair.
You simplest solution is to pull the KAM fuse for 15 minutes if you don't have a scanner handy to clear the code. For the 98, that will be the 5A fuse in the engine compartment mini-fuse box tucked back in the corner of the firewall and the inner fender. Pulling it instead of the battery negative cable will reset the computer without messing with your clock and radio settings.
Allow the PCM to perform its relearn procedure per your owner's manual after it is reset.

P0141 indicates "O2 Sensor Heater Circuit (Bank 1 Sensor 2)".
As Steve pointed out, the problem m-i-g-h-t not be in the sensor itself - might be in the electrical circuit connected to the sensor. Let us know if the SEL comes back on after you reset the computer.
