2001 Ford 4.2L Coolant Sensor Issue

I'm wondering if anyone can help with my problem. I have a 2001 Ford F150 regular cab with a 4.2L V6 with approximately 85k miles. The problem is that when I crank the truck first thing on a cold morning, the engine temperature light illuminates for probably a minute or two and the temperature gauge hand does not move. I can pop the truck into gear and slowly ride and eventually the light will turn off and the truck will start its normal warm-up. Any ideas? It only does this when it is cold in the morning. Not at any other time. Thanks.
