I'm not sure why you want to avoid cutting the windshield (unless you can't find a good glass guy) and although I have heard of it done, I don't have any examples where the glass recesses into a pocket in the brow of the 56.
However, there are some on here that have done sweet chops on their rides. Here are a few for you to peruse:

You're right, it looks awesome but it a lot of work and requires a lot of planning, cut the doors first right under the window opening, about 2'' is the max. There are some pictures in my gallery under 'top cutz' and WillyB did a coverage on his website of the whole job. (Hope that's finished!)
