I have a 75 f-100 with the straight 6 300 and I love it but thinking about switching to fuel injection not so much for power alone but efficiency and longer life. Any thoughts?
You can then bolt on a Holley 390 v4 carb or if you want to run a Holley 2300 v2 350 cfm carb (it is half a Holley v4 and looks like the Motorcraft 2100/2150 carbs) run an adaptor between the 2300 to Holley v4 carb intake.

You could bolt on a EFI setup that bolts to the intake, you would just need to make sure it would work on the size motor (300 six) is all.
or
If you want a DIY EFI look into Megasquirt MegaSquirt | Premier DIY EFI Controller to bolt to the intake.

I just had my 300 rebuilt and upgraded the carb to Edelbrock 500 cfm, Offy intake, EFI exhaust manifolds and a new cam and it runs great, great improvement over stock power and yet still gets great mileage as long as you run it on the primary 2bbls and don't kick in the 4bbl. 55-58MPH = 20.3 MPG on 79 F250 Regular cab, long bed, 4x4 with 300 and 4 speed manual.

I would be real happy with that MPG on my project 81 F100 4x2 flare side 300/T18 .
I would love to make mine EFI as well. I figure on just getting a whole EFI 4.9 with the computer and wiring. Dunno whether I want the EEC4 or OBD2 computer though.
Also wondering how a neutral switch can be integrated with a three-on-the-tree...
