Could the egr valve or cooler have a part in this? Or bad injectors?

You have a high pressure oil problem, its like blood for the truck and the pump is the heart of the truck.

The air test should reveal where that leak is or a weak pump is possible. Its just not meeting the higher demand when your at 55+ mph... IPR spikes attempting to give more pressure, it can't and the ICP (actual pressure icpv) drops and it dies.

EGR valve, no.
EGR cooler, no
Injectors, yes, they are oil driven, electrically controlled.
Are you getting codes for injectors?

No codes at all no engine light ether, when I put it back together for the road test I got a p2285 code but I figured it was from the air I tested with. It went off shortly after driving

ICP should hit 4000 when IPR is at 85%, with a stock tune. So it depends on what your IPR% was and if your tune is stock.

If IPR was 84 or 85% then yes, that's too low. That's a weak pump or a leak somewhere. I recommend getting the IPR air test fitting and going from there.

Ok guys I got the truck hot and I am doing a air test again I have had the air on for about 5 min now and nothing yet 12 volts to ipr. But while I was holding the gas to get the truck hot and it started smoking really bad I let off shut the truck off started it back up and have it a little throttle and the engine reved all the way up by itself and it stayed like that until I shut it off

Something is adding a combustible, fuel to the fire. Could be a turbo seal adding oil to the intake.
