has the inspection cover been off all this time?
On my '01, when I did that and drove it around, the noise was HORRIBLE because the separator plate between the engine and bellhousing buzzed like mad.
The only other suggestion I have is to monitor the PCM with a scan tool that can do data capture and watch the knock sensor PIDs. The knock sensor logic, if I recall correctly only pulls 4 degrees of timing. So even if it is seeing something, it may not be able to do enough in an extreme case. But it will tell you if it at least sees something.

My guess is a great big vacuum leak. Is this a stock vehicle, no mods at all? It would help everyone to know more about the vehicle you are working on and if your "2000 V10" is still in the same vehicle put it in.
