storing a perf. shortblock in truck for winter.

my low mileage rebuilt 351 blew a frost plug on my wife. normal driving and overheated. when i put a rubber one in to drive it home, well didnt happen. i filled with water and while cranking over( which it was fighting) it spewed water out of front around water pump , timing cover area. i couldnt tell as was on side of road. caa to the rescue. i get it home and find 4 or 5 cylinder with water in. this engine was built 5 years ago and never ran steady. it sat for long periods. it has been internally balanced with 030 kb hypers. c90e heads redone with port work and gasket match to stealth intake. dp. all comp valvetrain. cam and timing gears. there is maybe 12000 klicks i am ready to take off intake and heads, as all other stuff is removed. first time for this job. i could use any advice on this procedure as well as storing block ( minus heads and intake ) in the truck for a cold canadian winter. thanks. it sucks because a couple years ago i came ill with m.s and my cash flow is well, not much for toys and i was hoping this would run for a long time.

Your description does not sound very good for your engine. The cooling system should hold about 14-21 psi, and if the engine combustion is getting into them, you can experience the leaks you saw; blown seal on the water pump, or the freeze plug being pushed out. It sounds like you have at least a blown head gasket, and maybe cracked head or block. Further, some of the cylinders could have hydro-locked, possibly bending the connecting rods. I think a full tear-down and examination of all parts is in order.
