They probably took the sensors out for the temp and oil when they installed the aftermarket gauges. And the fuel sending unit is probably bad for the fuel gauge.
All you have to do is find the wires that goes to the sending units, and with the key in run, engine off, touch the wire to ground and watch the gauge. It should swing full scale to one end or the other. Then take it off ground and it will swing the opposite way. If it does this, the gauge and the wiring are good, the sending unit is bad or missing.
Should be a wire hanging around down near the oil filter on the 302/351w engine. Somewhere on top of the engine should be another wire hanging around for the temp sensor. The sending unit for the fuel is plugged in on top of the fuel tank.

Have you verified that the cluster is getting power?
I was having an intermittent dead cluster issue which turns out to be a wonky ignition switch. Turns out my return spring is weak, and sometimes, especially when its cold, the key doesn't bounce back all the way from the "start" position, kind of gets stuck between "start" and "run". In this position, none of the accessories get power, no radio, no gauges, no turn signals, etc.
It's an idea to check if really the entire cluster is dead.
