Having not been up to date on this thread about Bill's wife I made the mistake of scrolling down. LOL

Ok, got my gauges installed. Now my boost gauge is jittery. No boost till I get on it? then when it hits about 10psi, it starts fluttering. have not seen boost above 15psi, but I'm not really pushing it hard either. Does this prove the fact that my turbo doesn't like those injectors? Or is it just the norm?

If you have stage 1's and you're not seeing anything above 15 PSI boost, you've got some boost leaks somewhere. You should be pushing 20 PSI easy. For the jitters you either need to move the boost line to the spider pipe (I'm guessing you just tee'd it into the MAP line) or put a "snubber" in the line to regulate the pulsations down. Either way will work, but mine stopped fluttering when I drilled, tapped and installed the line into the outlet T of the turbo. The MAP line only reads the pressure on one bank so the intake pulses aren't smoothed out as much.
And yes, no more than 1200* EGT for very long or you're flirting with disaster.

I pushed mine to 1300, even 1350 for a few very short bursts of power when towing, but I have a TON of towing experience and I am comfortable with that. When I say short bursts, I mean like 5-8 seconds. The general rule is to keep is below 1300 if you can if pulling a grade or headwind for a long period.

My .02$, way back when I had my 1st CC PSD I was pretty oblivious to exhaust gas temps, I had a 3", strait exhaust and a superchips 1705 set to the highest setting. Often I'd run up 95 NY to Maine with the speedo buried for miles at a time which required a heavy foot... In hindsight that musta been makin a CONSIDERABLE amount of heat unless that 1705 was very mildly fueling....
My new truck has the probe in the DP which I may change, so you figure 300-400 degree difference (at least that's what I've read) and I've seen 900-1000 on there for 10-12 seconds but who knows what its really at not having the probe in the manifold.. I guess what I'm sayin is these have got to be pretty resilient engines to heat don't they? I'd love to hear/see some meltdown stories others have witnessed!?
