Hi, I have a bulletproofed 2003 F250 6.0 with fresh head studs and egr delete. I was working it hard the other day riding off road on the beach and the coolant temp rose to 216 on my Scangauge II and I think I heard the electric fans kick in. I then pulled over and let it lower back down to normal before driving again. The trans was only slightly hotter than normal driving. I've owned this truck for awhile but I don't know what are safe coolant temperatures for this engine. I like this truck a lot and after putting all the money I have into it I want to insure the most problem free ownership. What are good coolant temperature ranges for the 6.0?

On the 6.0L unless it goes over 225-230*, keep driving it. The fan will pull a lot more air in and cool the motor down if it's still revving somewhat versus idling, it moves a LOT of air when it spins up all the way. I think Mark says the recommended warning is 215-220*, and the engine defuels itself at 235*.

Do a cold soak check to make sure you don't have a sensor bias issue. I think it's unusual to do really invasive work and not lose at least one sensor, either an ECT/EOT or the OP switch are really common, ECT especially if you did a coolant flush.
