1978 F100, no electrical, completely dead, won't start

I do not know what the starter relay is, but the yellow and black wire connects, along with the positive battery cable and the fusible link, to the side of the solenoid that is closest to the battery. I am guessing that side of the solenoid is what is called the positive side of the starter relay.

I finally got it to turn over from the switch but it doesn't stop turning over. Any ideas why?

It sure can be. More on that later. Throwing parts at a problem can work too, but it's usually done by someone who doesn't have to spend their own money. It can get pretty expensive.
It's considered good practice to replace a starter with a new starter relay (aka solenoid). This assumes the rest of the starter and charging system is in good shape. After 50 years or more, that isn't the case. All the rust and corrosion on the connections and grounds causes lots of grief. It roasts starters and alternators and solenoids. Then to complicate all this, the modern el-cheapo replacement parts aren't any good out of the box and may be worse than what you're replacing. If you're a "parts changer" only this will really cause confusion.
Use good quality heavy duty starter parts with clean, tight grounds and connections, a fully charged setviceable battery and good alternator etc, and your troubles will be over.
