Sorry to hear of the problems you've been having.
Which desert are you in? I only know of 2, Death Valley in the south and the stretch from L.A. to Vegas but I'm sure there are more.
I think I would just let the ins. co. send an adjuster/estimator out to assess the damage and that way you can get more if the contrctor finds "unseen damage" while doing the repair. I had a similar experience with my house in Miami after Hurricane Andrew.
