I have access to a 2000 Expedition rear axle & associated hardware. Would it be possible to bolt it up it to my '74 F-100 (2wd) to increase towing capacity/burliness ??

It should go in. It is only an 8.8 and you should have a 9". I don't think that you will gain much other than everything is newer. I personally would stick with the 9". You will probably have a hard time trying to hook up the rear disc brakes on your old truck.
