Turning the crankshaft with one hand...that doesn't sound good, except for the fact that it turned. That means that there is no compression, either by bad valves, gaskets, or even missing parts, but at least the engine isn't frozen. There's no telling what is going on inside the engine without opening it up.
One thing that you should look for the integrity of the body and frame. Check all parts of the body to make sure that there isn't large amounts of rust through palces such as the bottom of the doors, cab corners, ect. Check and see what might be savable and what might not. If too much of it will need to be replaced then this truck may be better as a parts truck than an actual project.
Starting with a complete truck is good because you'll know how it's supposed to go together and finding replacements will be easier.
