Last year I bought 2 yards each of original New Old Stock material from SMS. Finally bit the bullet, pulled seat and took to the upholsterer last week. They did some foam restoration and spring work on driver side edge that always gets crushed. I asked to have it reupholstered exactly like original including same type and location of seams. Very pleased with the result but it was an expensive project. Probably need my head examined but the desire to make/keep things like original usually always costs more. I probably could have got it done cheaper but didn't feel like gambling on quality. $360 including shipping for the material from SMS and $800 to have the work done.
The inserts are the semi perforated/textured or whatever the correct terminology is. It is identical to the original under close scrutiny. The upholsterer said both the smooth and and perforated material were definitely original old stock and not reproduction.
The line I always use on my wife whenever I end up sending more than I originally thought is:
"Money has no value until you spend it on something that makes YOU happy".
If you are happy , then the spend it worth it regardless of the amount.

Agree W/the other, really nice looking upholstery, sets your interior off.
Not sure you remember reading a post couple years ago, the guy was buying a 4 x 4 dentside for his wife to use going fishing, because his wife remembered her father had a dent that he took her fishing when she was a young girl. The guy buying the dent for his wife indicated he was a lawyer and didn't have the background, so checked with the forum to help prepare himself making an informed purchase. When I read what you wrote regarding the price of materials and skilled labor, you don't need your coconut examined, that what you work for. We know our trucks for the most part are "money pits". And the lawyer as I mentioned above, wrote that he "had more money, than sense".
If I remember correctly, Ford called the upholstery "Knitted Vinyl", which is what my former 1979 F-100 had, and I really like the way it looked.

SMS Fabrics can't be beat for quality and authenticity. If true originality is what you are after they have, or will make, what you need, tho cheap it is not. They will send you free swatches of anything you request. Yesterday I ordered fabric for my '75's seat's inserts. I found it at $20/yard online elsewhere, tho not really correct. Paid $130/yard at SMS instead. In the end, I know it will be worth it for several reasons.
