I'm looking to move to bigger tires and would like to know who has put 315/75R16's on the stock 7" Steel rims? I'm not opposed to going to wider wheels, but I actually kinda like the looks of the stock hubcaps on the truck.

That is an awfully wide tire on a really narrow rim. You will need to run it at about 35-45 psi to get the tread to be flat on the ground and not crowned in the center. And with that you will have reduced load capacity and the truck will feel squirmy due to the bulging sidewalls. Additionally, not all tires of the same listed size are actually the same size. Some run small, some are pretty close, and some are almost dead-on. Even if you found one that ran small, almost no tire shop will mount a tire these days that doesnt fall into the recommended rim width range.
You should really consider: narrower tires, wider rims, or the tire size you want but on the proper width rim.
Squirmy squishy steering feel, lousy rear end tracking, and the front tires will roll under on hard turns. Could even pop off the bead, which would not be fun on a hard turn.
I ran 315/75/16 on some 8 wide wheels for a while. Put about 10-12k miles on them before I changed my setup. Didn't have a single issue with wear on them, and try handled well. But then again I only put 10-12k on them. I ran them at 45 psi in the front and 40 in the rear. They were fierce attitude mud terrains. I now run 16x10 wheels and 305/70/16. These I run at 45 psi in the front and 38 psi rear. Have 10k miles on these now and they look new. These are toyo at2's. I can't imagine the 315/75/16 on 7 wides would ride/ handle much different than 8 wides but I might be wrong. Also, I hope you have more than a leveling kit, the 315s rubbed pretty bad on the leaf springs on my truck with a leveling kit.

I've done more than a good bit of research on it and it looks like a lot of guys do it. We used to do it all the time in the Jeep world because you could run lower pressures on the trail without fear of losing a bead. Is it ideal? probably not. will the tires wear a bit faster, sure.
I'm not expecting it to corner like a lowered S4. It's a 2 ton truck that's 7' tall.
