Question Boiling

My 88' 5.0 bronco is acting funny. During normal start up and warming everything is fine, I drive off. As I drive it continues to warm, gets to the "N" in normal and then starts to fall to were it normally runs (between the first dash and "N"). A few weeks back it started to climb way past "N" before it would start to drop, up "M". If I noticed it and gave a little gas or brake it would begin to fall to were it likes to be. The other day it did not stop heating up, It boiled over. I pulled off the road and shut the engine off. 30 seconds had passed and it started to shutter and burp. I waited 20 min and started home (maybe I could limp it home slowly with a lot of stopping and waiting). I started it up and the temp went up to the "N" and then started to fall back to were it likes to run. About 6 months ago I put in a new w/pump, hoses, belts and a 190 thermostat. The heater core was bad so I bypassed it, that shouldn't hert anything though.
