Sounds good.. I did a turkey in Coke a cola, stuffed with apples, onions and garlic in the smoker.. Definitely need the thermometer to tell when it is done..
We have a huge fire pit thing , shaped like a Chinese wok . A stand for the turkey , lots of char col , sand , and a small metal trash can . Get the cols ready , dress the turkey with a few injections , put it on the stand with Guinness up where it belongs , on the base . Cover with the metal can , surround with coals after sealing the bottom with a dam of sand . a few coals on the top ... Convection heat . Cooks fast , after a bit of practice !
